Tomyam Paste

 Tomyam Paste

SERVING: As shown in picture. Approximately 1 to 2 kg 

INGREDIENTS :
  • Sufficient cooking oil 
BAHAN KISAR: 
  • 4 tablespoons of dried shrimps 
  • 2 onions (replace with 6 shallots even better) 
  • 6 shallots 
  • 7 fresh red chillies
  • 1 1/2 cup dried chillies 
  • 6 cilantro roots 
  • 3 limes juice 
  • 1 lemon juice 
  • half a bowl of tamarind + 2-3 bowls of water to blend everything 
  • 2 inches ginger 
  • 1/4 belacan 
  • 8 lemongrass 
  • 10 limau purut leaves 
SEASONING: 
  • 1 ketul Gula Melaka
  • 6 teaspoons salt 
STEPS:
  1. Blend all the bahan kisar finely. 
  2. Heat up the wok with sufficient oil. 
  3. Fry all the blended ingredients till pecah minyak. 
  4. Add in the seasoning ingredients. 
  5. Continue to stir fry till it thickens a little. 
  6. Store when it has cooled down. 
NOTES:
  • No joke, the sour taste really requires that much of tamarind.
