Tomyam Paste

INGREDIENTS :
- Sufficient cooking oil
BAHAN KISAR:
- 4 tablespoons of dried shrimps
- 2 onions (replace with 6 shallots even better)
- 6 shallots
- 7 fresh red chillies
- 1 1/2 cup dried chillies
- 6 cilantro roots
- 3 limes juice
- 1 lemon juice
- half a bowl of tamarind + 2-3 bowls of water to blend everything
- 2 inches ginger
- 1/4 belacan
- 8 lemongrass
- 10 limau purut leaves
SEASONING:
- 1 ketul Gula Melaka
- 6 teaspoons salt
STEPS:
- Blend all the bahan kisar finely.
- Heat up the wok with sufficient oil.
- Fry all the blended ingredients till pecah minyak.
- Add in the seasoning ingredients.
- Continue to stir fry till it thickens a little.
- Store when it has cooled down.
NOTES:
- No joke, the sour taste really requires that much of tamarind.
