ORIGINAL RECIPE: 

Pan size: 8 x 5 x 4 inch (21 x 13 x 10 cm) loaf pan INGREDIENTS 2 tablespoons (30mL) warm water 1 teaspoons (7g) honey or 2 teaspoons (7g) inulin 2 teaspoons (6g) instant dry yeast 1 cup (120g) vital wheat gluten ⅓ cup (35g) blanched almond flour ¼ cup (30g) coconut flour 2 tablespoons (16g) ground flaxseed ½ tablespoon (5g) psyllium husk powder 3 tablespoons (38g) granulated erythritol ½ teaspoon (3g) salt 2 large eggs at room temperature ¾ cup (177mL) water 2 tablespoons (30g) unsalted butter at room temperature 1 tablespoon (12g) black sesame seeds Rest for 30 minutes before adding the butter. Rest for 30 minutes before adding the sesame seeds. Proof for 1 hour then divide the dough into 3. Proof for another hour and bake at 340°F (170°C) for 40-45 minutes. NOTE: For best results, I highly recommend using the metric/gram measurements (using a digital scale), rather than the standard/cup measurements. Yields 12 slices (macros per slice) NET CARBS: 2.3g FIBER: 1.9g PROTEIN: 10.0g FAT: 6.0g CALORIES: 112

NOTE: 

  • I used breadmaker instead of oven. Baked in breadmaker for 40 min but requires additional 150 DC 10 min air fryer baking. 
  • This bread DOESN'T rise much but the texture is soft. I usually toast on the wok with butter before eating. 



    It tastes exceptionally good when eaten with spicy oil tuna + egg + cheese

 Keto Sunflower Seed Cookies

(已经过本人改良依据个人喜好)

干材料:
112g almond flour (杏粉)
54g coconut flour (椰粉)
1 tbspn vital wheat gluten (面筋)
1/2 teaspn baking soda (小苏打)
1/4 teaspn baking powder (发粉)
1/2 teaspn salt (盐)

湿材料:
90g butter (无盐,所以我增加以上的盐)
50g erythritol (赤藓糖醇)(喜欢甜就用60g)
1teaspn homemade vanilla extract
2 eggs (我用c grade)

Filing内陷:
60克🌻籽 (原谱用无糖可可粒)

做法:
混合干材料。
用fork随便打发牛油+糖。加入鸡蛋,vanilla。混合均匀就好了,不用很久。
倒干材料进入湿材料。 加入🌻籽。混合均匀。
用茶匙整形,铺在油布上。
送进已预热5分钟170度的烤箱(我不喜欢早早就预热烤箱)。
烤15分钟170度直到小饼干熟透(下面是褐色,上面也有一点褐色,按下去微微软有点硬成形,不是像面团的软)
放凉,收Tupperware当早餐午茶。

Serving: 36 small bite sized 🍪
一个人吃的话,可以吃相当长时间

Macros for entire batch of cookies:
Cal: 1920cal
Nett carbs: 24g
Protein: 64g
Fat: 176g
Fiber: 48g






Keto Cocoa Liquor Cookies

KETO COCOA LIQUOR COOKIES

SERVING:

Yields 50 bite sized cookies approximately

INGREDIENTS: 

(A)
90g unsalted butter
1/2 teaspn salt
2 eggs
70g powdered erythritol

(B)
112g almond flour
54g coconut flour
1 tbspn vital wheat gluten
1/2 teaspoon baking soda
1/4 teaspoon baking powder

(C)
60g cocoa liquor
20g sunflower seed


STEPS: 

Mix A. Mix B. Pour B into A. Mix well. Add in C. Form balls using a teaspoon. Bake at 160DC for 20 min (until cooked). 






Keto Pandan Kaya

 KETO PANDAN KAYA

SERVING: 450g approximately 

INGREDIENTS 

4 鸡蛋
250g 浓缩椰浆(我用盒装)
200g 白糖 ( 我用150g erythritol 都觉得够甜了)
10 pandan叶
2 pandan叶(煮的时候用)
盐(大概1/4teaspn,慢慢自己加)
10片pandan叶和椰浆一起blend。
加入erythritol,混合。
加入鸡蛋,混合均匀。
全部拿去过筛。
其余2片斑斓叶子和kaya一起小火煮。
我煮到变curdle去,不理啦。
我过后看到浓缩了,就停火,拿去blend到幼
我有加非常少非常少的Xanthan gum为了要浓缩一点点(可不加)
明天,我终于有面包+kaya可以吃了



Keto Breadmaker Loaf

KETO BREADMAKER LOAF

SERVING: 1 loaf (usually 16 thin slices +-) 

BREADMAKER: Philips HD9045-30

INGREDIENTS: 

240ml warm water 

2 eggs (room temp)

41g oat fiber 

70g flaxseed meal

190g vital wheat gluten

1 teaspon (6g) salt (circumference of the bread container)

2 tbspn (30g) powdered erythritol 

1 teaspn (7g) honey (circumference of the bread container) 

1/2 teaspn Xanthan gum (spread out evenly) 

30g butter (olive oil)

1 tbspn (8g) instant dry yeast 

STEPS: 

  1. Mix all the ingredients into the breadmaker.
  2. Use setting 1: White Bread. 750g weight and dark mode. Time taken around 4 hours 10 minutes.
  3. Done baking, take it out from the bread container and cool on a rack. 
  4. Slice when it has completely cooled down. 
  5. Store remaining slices of bread according to portions in freezer.
  6. Just take it out to thaw/toast straight in the air fryer in the morning for a quick toast (200 DC for 3-4 min)
