Sambal Hitam

 Sambal Hitam Pahang 

Versi saya-sendiri 


SERVING: 
Approximately 500g to 1kg sambal paste (1 tingkat mangkuk) 

INGREDIENTS: 
  • Sufficient cooking oil
Bahan kisar: 
  • 1 bowl dried chillies 
  • 1 bowl shallot 
  • 1 bowl ikan bilis 
  • 3 bowls belimbing muda 
  • 1/2 to 1 bowl water (to blend) 
Seasonings: 
  • 2 tablespoons dark caramel sauce 
  • 8 to 10 teaspoons brown sugar 
  • 2 teaspoons salt 

STEPS: 
  1. Wash and clean the belimbing muda. Discard the juice by tapis-ing (to reduce cooking time). When I made this earlier, I didn't remove the juice. 
  2. Blend all the ingredients for bahan kisar (don't make it too fine; better still if use lesung to remain the texture). 
  3. Pour cooking oil in wok. Fry all the blended ingredients till pecah minyak (about 45 minutes small-medium fire). 
  4. Add in the seasonings and fry another 10 to 15 minutes with big fire just to thicken the paste.  
  5. Store when it has cooled down.
