I'm so happy! I just made a simple dessert using some basic ingredients at home. It tasted really special. It is a luxury snack for me. Enjoy the chocolate topping and pancake at the same time, what a bliss! I just couldn't describe with words how good this is in your mouth.
It is a combination of a few food: barley and blueberry to give it some sweetness. Then the chocolate a bitter-sweet taste. The barley bites resemble red beans starchy bites. It is just awesome. I am going to do this again tomorrow. I'm so thrilled.
And for goodness sake, trust me, it doesn't taste that bad as it sounds from the ingredients.

Barley Pancake
Serving size: 1 pancake
Total calories: 109 cal
INGREDIENTS
50g barley (boiled; don't take the water) 61 cal
1 tablespoon of blueberry jam 38 cal
1 tablespoon of water 0 cal
1 Beryl 52% dark chocolate couveture coin ~ 9 - 10cal
STEPS
- Mash barley and blueberry jam with fork till mushy.
- On low hot pan, spread out (1) into pancake shape (roughly 2 cm thick).
- When the edges start to harden and sugar from the jam almost crystalizes completely, roll the pancake both sides to the center.
- Place pancake on a plate. Put a coin of chocolate on top.
- The chocolate will melt due to the heat from the pancake.
- Spread out the chocolate easily as topping.
I am not sure how much flour is needed to make this similar amount of pancake. However I used 50g of barley which has only 61 cal. Assuming if half of the amount 25g flour is needed, the calories will be 66 cal. So no matter what, I still think barley replacing flour is a better choice.
