Fried Meat Eggs

I wanted to do this dish for quite some time but hesitated. All these while, I don't like to fry stuff - it's quite troublesome to clean up after that and I always find frying difficult. Finally, I have the courage to do so -

Fried Meat Eggs 


This can be a really great dish for CNY. People will be 'wow' at your dish.

INGREDIENTS
hard boiled eggs
pork meat mixed with chicken meat (3:1)
1 egg mixture
Some wheat flour
Biscuit crackers (smashed) [you can use bread crumbs if you have]
Oil

Marinate Ingredients 
Curry powder
Soy sauce
Pepper
Salt
Coriander powder
Shao Xing wine

STEPS 

  1. Mince meat into slightly starchy and sticky. Add in marinate ingredients and mix well. Refrigerate while not in-use. 
  2. Boil eggs till 80% cooked. 
  3. Prepare 3 bowls filled with: flour, egg mixture and marinated meat. Also, prepare 1 clean plate to put the ready eggs.
  4. Roll up some flour on the surface of the egg, coat it with a layer of meat, coat with egg wash, dip in crushed cookies, set aside on a clean plate.
  5. Heat up oil using big fire (if a wooden chopstick enters the oil and produces a lot of bubbles, the oil is too hot, reduce the temperature slightly). While frying, use medium fire. 
  6. Fry the egg until cooked. It is advisable not to fry many eggs at one time to avoid decreasing the oil temperature. Frying in low temperature oil will cause the food to suck in lots of oil and lumpy.
  7. Cut the egg into half and serve. 
Before fried - after the egg has been coated with everything.
It's advisable to do all the coating for the eggs before you start frying - to keep things tidy.
