I made this cake a couple of months ago but I was too busy to update the recipe. It's a rich-cheese cake and cheese-lovers will definitely love it. High budget cake too.
Snow Cheese Cake
Recipe taken from: Hs Hs Vi
I did the cake using 7 inches round baking tin. However, the original recipe is for 8 inches cake. Just use simple Mathematics if you want to do a 7 inches cake.
8 inches round baking tin
INGREDIENTS
A [egg yolk batter]
5 egg yolks
20g sugar
60g Canola cooking oil
100g cake flour (low protein flour)
65g milk (20g milk powder + water)
B [egg white batter]
5 egg whites
1/4 teaspoon cream of tartar
60g sugar
C [filing+frosting]
125g butter
250g cream cheese
50g evaporated Carnation milk
100g whipping cream
D [decoration]
Cheddar cheese (scraped)
Strawberries
STEPS
- Mix ingredients A.
- Whip egg white until huge bubbles are formed. Add in cream of tartar. Continue whipping with addition of 1/3 of sugar at a time until egg white reach stiff peak stage.
- Mix 1/3 of egg white batter to the egg yolk batter. Pour cake batter into the remaining egg white batter. Mix well with scoop and fold method.
- Bake in a preheated oven of 150 degree Celsius until cooked.
- Invert the cake after it has cooled completely.
- Slice cake into 3 or 4 layers.
- Whip ingredients C except whipping cream until mixture turns milky white. Add in whipping cream and fold well.
- Frost the cake.
- Scrap cheddar cheese block onto the frosted cake. Refrigerate.
## The making of cake base is chiffon cake.

材料A
5粒蛋黄
20克细砂糖
60克粟米油
100克底筋面粉
65克牛奶
材料B
5粒蛋白
1/4Tsp塔塔粉
60克细砂糖
材料C
125克牛油
250克 Cream Cheese
50克练奶
100克动物性奶油Whipping cream
材料D~ 装饰外面
Cheddar Cheese 刨丝
草莓
做法(一般戚风做法)
1) 材料A拌均备用。
2) 材料B, 蛋白打起粗泡后加入塔塔粉,糖分三次加入, 打至硬性发泡。
3) 将1/3的蛋白霜加入蛋黄糊,以上下轻手拌均,再倒入2/3的蛋白霜里,继续拌均。
4) 倒入8寸铺好油纸的蛋糕模里,轻敲一敲,震出气泡。
5) 预热烤箱 170度 上下火,下层,50-55分钟至熟。
6) 脱模,蛋糕冷却后,表皮切除,分割三片。
7) 将材料C全部(除了Whipping)打至松发成奶白色,后加入Whipping拌均。
8) 然后将第一片的蛋糕体涂上第一层cream, 完成全部,再把整个蛋糕都涂上。
9) 最后的装饰就是,放上材料D。布置。
